Our ambition is to bring an unsurpassed drinking and dining experience to the Peak District. That means sustainability must be at the core of everything that we do, because for us, being ‘Green’ is not an add on, but the way to create a relaxing space and great food and drink.

To ensure our dishes are as flavoursome as they can be, we have found the best local suppliers and working with them guarantees that we know that the land has been respected, animals have been well looked-after, and that you receive high-quality, seasonal produce. Being bold in cooking means thinking creatively and sustainably about our food, which is why we are committed to top-to-tail cuisine and why we grow all of our herbs in our on-site garden. With 90% of our kitchen supplied within 5 miles of the pub, you’ll be served straight from plot to plate.

Thinking sustainably also extends to our building, where over three years of restoring and renovating we took the utmost care to leave the least impact on our environment as possible, whether reusing old materials and upcycling furniture or installing state-of-the-art insulation and energy-saving technology. In fact, our bar and tabletops were repurposed from the boards of a 300-year-old English oak wagon.

On a daily basis, we use paper made from sustainable sources and energy-saving light bulbs wherever possible; we use paper straws in our bar and restaurant and recycle all glass, paper, and plastic; and if there is any food waste it is sent to an anaerobic digestion plant or used for local compost.

Our guest rooms have refillable containers and products to minimise the use of single-use plastic and we use eco-friendly powders and green chemicals to wash our laundry.

Our guests and patrons are able to use complimentary universal electric car charging points in addition to our bicycle storage and repair shed. In our own small way, we will continue to look after our fragile planet and strive to be as low-carbon, sustainable, and ethical as possible.
